Yep, I have been taken out of the game, thanks to a little cold.
I haven’t been able to workout since THURSDAY!!! I have now missed 3 workouts and it is completely playing with my brain. On one side, I know that chances of me loosing large amount of muscle after only missing 3 workouts is pretty slim, but on the other side, I know that I am not making any gains.
Damn you, cold. I am feverish, tired and have a brutal cough that is driving me bananas! Last night I went to bed at 8:30 and was still coughing at 11:00, then I had to move to the Lazy Boy to get some sleep. When my alarm went off at 3:50, Ryan asked, “Are you trying to kill yourself? You aren’t working out today.” So back to bed I went. To make matter worse, I seem to have passed my cold on to Ellie, FANTASTIC!
What’s a girl to do? When I get sick, I get baking. Thankfully, this recipe is pretty good. Since this recipe is nut free and loaded with quality fibre and healthy fats, this would make a great school snack.
Chocolate Flax Muffins, adapted from Muscle & Fitness Hers
- 2 cups flaxmeal or flaxseeds ground in a blender
- 1 tbsp baking powder
- 2 scoops artificial sweetener free chocolate whey protein (look for ones sweetened with Stevia)
- 2 tbsp cocoa powder
- 3 packets of stevia
- 1/2 cup of water
- 5 tbsp of neutral tasting oil, like organic safflower oil
- 5 egg whites
- 2 whole eggs
Preheat oven to 350 deg F
Pretty easy from here, in one bowl, mix all of the dry ingredients together. In another bowl, mix all the wet ingredients together. Add the wet ingredients to the dry. Mix and spoon into a muffin tin that has been sprayed or lined with muffin liners. Bake for 15 to 20 mins.
These ones were pretty good. The first time I made them, I didn’t use flaxmeal, just flaxseeds and that was pretty gross. They were much better the second time around.
