I love September, could be because it is my birthday month.
September to me, has always signified a new beginning. A new school year, a new teacher, my birthday, which often comes along with new clothes! This year, there is another new beginning. Mason is starting at Montessori school! I am having a minor freak out, because that means that my baby is growing and next year he will be in Junior Kindergarten! Montessori school is pretty much the same structure as public school, they have a cirriculum, progress reports, parent teacher interviews and recess. They will feed Mason at his school, two snacks and lunch, but the snacks and lunches are not gluten/dairy free, so I think that I may opt out of that.
What does that mean for us? I have to come up with creative, fun snacks that my picky boy will eat, but here is the kicker…..they have to be nut free!!! Nut free isn’t even remotely in our vocabulary. We are nut-a-holics. We usually have a nut product and breakfast, for snacks and for dinner. What am I to do? I did do one post a while back that had school friendly snacks, but of course, the bars were made with soy nut butter. I think that I might be keeping soy nut butter in business this year.

Easy Kid Snacks….Please note, the Wheat Thins are not Gluten Free and if you are making the bars, you can use 2 scoops of your own protein powder.
Here is one more recipe for you:
Banana PB Muffins, adapted from Company’s Coming: Mostly Muffins, Gluten/dairy/nut free
- 2 cups oat flour (use uncontaminated oats and grind in food processor)
- 1/3 cup coconut sugar
- 1 tbsp. Gluten Free baking powder
- 1 large egg
- 2 mashed bananas
- 2/3 cup soy nut butter
- 2/3 cup non-dairy milk, such as almond or coconut
- 2 tbsp olive oil
Preheat oven to 375 deg F
Mix the first 3 ingredients in a large bowl. Mix last five ingredients in a smaller bowl. Once well combined, add the wet ingredients to the dry ingredient. Mix just enough to ensure that all of the ingredients are combined. Divide into a mufffin tin lined with papers.
Makes 12 muffins.
I just made these, Mason hasn’t had a chance to have one yet, but hopefully he enjoys them!
